**Artisan Farm-Raised Roast Goose with Traditional Sides**

*What does "artisan farm-raised" mean?*  
We exclusively source free-range geese from small Polish family farms. Our direct-supply farmer guarantees:  
✓ Only 250 geese per football-field sized pasture  
✓ Herds never exceed 2,000 birds  
✓ Always delivered fresh (never frozen)  

**Meal Includes:**  
- Whole roast goose (5kg)  
- Braised red cabbage (700g)  
- Traditional kale (700g)  
- Rich goose gravy (500ml)  
- Homestyle potato dumplings (8x125g)  

**Preparation:**  
1. **Dumplings (25 min):** Boil in salted water (500ml/dumpling) for 10 mins, simmer 15 mins  
2. **Sides (25 min):** Heat cabbage/kale/gravy in pan or microwave (stir occasionally)  
3. **Goose (35 min):**  
   - Roast breast-up at 160°C (10 mins)  
   - Crisp at 230°C (25 mins)  
   - Add water to tray to prevent drying  

*Chef's Tip:* For extra-crispy skin, pat goose dry before roasting.
