Ingredients for Roast Goose:
Whole free-range goose from small-scale farming, salt, pepper, apples, onions, mugwort, and selected spices.

Preparation Instructions for Our Goose

Dumplings. Preparation Time: approx. 25 min.
Start boiling water for the dumplings before putting the goose in the oven.

Place the potato dumplings in rapidly boiling salted water (at least 500ml per dumpling) and boil for at least 10 minutes before reducing the heat to let them simmer. The dumplings are ready after 25 minutes but can remain in the water for an additional 10-15 minutes.

Side Dishes. Preparation Time: approx. 25 min.
Red cabbage, kale, and gravy can be heated in a coated pot or microwave-safe dish (approx. 25 min). Alternatively, warm them in their original packaging in a water bath (approx. 35 min). Stir occasionally to prevent sticking.

Roast Goose. Preparation Time: 35 min.

  1. Place the whole goose breast-side up (or quartered pieces skin-side up) on a baking tray with 1 tbsp (10ml) of water.

  2. Roast in the preheated oven at 160°C (convection) for 10 minutes.

  3. Increase temperature to 230°C and roast for another 25 minutes until crispy.

  4. Check crispiness; extend cooking time if needed (especially when heating multiple geese).
